Creamy Italian Tomato Rosemary Risotto
A heartwarming dish for a baby-and-me lunch! Wonderful leftovers for tomorrow’s dinner, and a sweet garlic-scented home! We often make risotto because it takes on flavours so well, is filling, and is very delicious.
(Another favourite here is mushroom risotto. Sautee up some shallot, garlic, salt & pepper, a tiny splash of Marsala wine, and mushrooms in olive oil for a scrumptious flavour. Non-GMO, organic, fresh, local, vegan ingredients:
In a medium-large pot, warm a few tbsp olive oil on medium-low heat, and add in a chopped shallot (or two smaller ones), 1-2 minced garlic cloves, a diced tomato, some dried rosemary, a pinch or two of pink Himalayan salt, and freshly ground pepper. After a few minutes, add in 1 cup organic arborio rice, stir, and cook for 3 minutes. Add one cup vegetable stock or water and stir. Let cook until most of the liquid has cooked down. Repeat this last step two more times patiently and attentively. Add more salt and pepper to taste if needed and serve warm and enjoy!
Add a few fresh basil leaves if you like. (We grow them near the windows in the kitchen and eat it all the time.) Store in an air tight glass container and reheat with a little liquid the next day.
