Roasted Brussel Sprouts

Little, sweet roasted greens take off their layers and warm their leaves by the fire.

Non-GMO, organic, fresh, local, vegan ingredients:

In a small baking dish, place some Brussel sprouts (wash and trim bottom slightly and remove a few outer leaves), a few tbsp of olive oil, salt and pepper.  Place in an oven heated to 350 degrees F and roast until tender, about 35 minutes minutes.  Serve warm and enjoy!

Paper white bulbs grow as excitement over the holidays does, too!  Keep your neck and throat cozy and bundled for a health-filled holiday season!  Eat bits of garlic, lots of veggies, drink water, wash your hands often, dress warmly, and think positively to help yourself, too!

Organic Toddler-and-Me Snack:  Rosemary Crackers, Raisins, Goji Berries, Pine Nuts, Dried Cranberries, Dried Mango, and some Roasted Red Pepper Hummus to dip the crackers into.  Serve a few of each item with water and enjoy!

Potato Broccoli Soup

A heart-warming memory of this onion-scented soup fulfills the soul’s call for coziness this time of year.  The nutrients and health benefits of the soup give you good energy and zing! you’re ready to write a new book or go out for a good walk!  This is a great soup for the week to pair with dinner or to have for lunch or a snack.  It tastes better each time you have it!

Non-GMO, organic, fresh, local, vegan ingredients:

Place the following ingredients into a large pot and cook on medium, with a lid on/tipped near the end, until tender:  5 potatoes cut into small squares, 1 large clove of garlic minced, 1 chopped onion, 4 chopped celery stalks, salt and pepper, a few tbsp of olive oil, water to cover all.  When almost done, take 1/3 of the soup and place into a bowl, mash up with a whisk and return to the pot.  This thickens the soup.  Add broccoli, cut all of it up into smaller pieces, and steam everything with the lid on until the broccoli is slightly tender.  Serve warm and enjoy!
