Parsnip & Golden Beet Chips

Crisp, yet soft, parsnips and golden beets roast ever so sweetly in the oven on a cool mid-morning and are ready for lunch.  Dip them into old world mustard, if you like, for a tangy dance partner.  A fun and colourful dish for the whole family.  A simple roast for a company of friends.

Non-GMO, organic, local, fresh, vegan ingredients:

Saving the greens for a soup, wash the vegetables and keep wet so they steam-roast in the oven, oil-free.  (Do not peel or cut off the ends.)  Slice the parsnips and beets into long strips, and place in a dish.  Pepper and sprinkle over some Ras el Hanout and Cinnamon, mix to evenly coat.  (Leave out salt for babies and low-sodium diets.  Salt very lightly with pink Himalayan salt if you do salt.)  Roast in the oven at 350 degrees until golden and crisp, about 20-40 minutes, depending on vegetable thickness.  Plate & Enjoy!  (Super crispy parts are not for babies.)

Garlic Mashed Potatoes, Applesauce, and Cucumbers

Warm and cool, sweet and tart, smooth and pillowy, this meal is a memory from the 90’s when mashed potatoes and applesauce were inseparable.  Children of all ages still love it.

Slice up cucumbers.  (Serve skinless ones for older babies unless they don’t have trouble with skins.)

In a large skillet, add 1/4 C water, and sliced garlic.  Simmer on low until soft.  Wash potatoes and keep skins on.  Add in roughly chopped potatoes (we used fingerling potatoes), and cook until soft.  Pepper, smash, and mix with a wooden spoon.  (The starchy water is all you need for moist potatoes.)  Serve warm with other vegetables, applesauce, and salads.

Sweet Potato & Potato Home Fries

Sweet and starchy, all a-crisp, this quick dish is pleasing to little fingers and parents alike.  Steam cook these oil-free for a healthier you, cost-effective too.  The more your groceries and garden gatherings are composed of fresh plant produce, the less “extras” you buy, the more money, energy, and time you save while improving your health.

Non-GMO, organic, local, fresh, vegan ingredients:

Dice up some potatoes and sweet potatoes, about the same size for even cooking.  Add 1/4 C of water into a large skillet, or however much you need, depending on the amount you’re cooking.  Add in some Ras el Hanout & Cinnamon & Pepper, or fresh herbs like rosemary, sage, thyme, etc.  Add a lid and steam cook to soften for about 4-6 minutes, stirring to prevent sticking.  (Add more water if needed.)  When soft and easily cuts in half with fork/knife, remove lid, add in 1/4 C cornmeal and let the water cook down, allowing the potatoes to become golden and crisp, for another 5 minutes or so.  Serve warm!  (Babies may pick out more of the sweet potatoes which is just fine!)

With a pantry full of fresh foods, the week is fun.  It’s easy to cook by inspiration of what is ripe and ready to harvest, what looks good at the market, and by mood.
