Eggplant Garlic Bake
Simple, easy, and pleasing for the whole family, even for those who may think they don’t like eggplant. The little shallot spirals are darling to behold.
Non-GMO, organic, local ingredients: (oil-free)
Slice an eggplant (these are small Italian eggplants), a shallot, and a clove of garlic and place in a glass dish. Sprinkle a little water and mix around. Add a little pink salt & fresh pepper, mix to coat. Sprinkle a bit of cornmeal over the top and bake at 375 degrees for 35 minutes. They will be tender with a little bit of crispness from the cornmeal. (Leave out salt for babies and season for adults later if desired.) This simple dish is lovely for the whole family.
