The colours of the Earth and Waters soften in the mist of a warm, winter’s day. The ocean slumbered in a private veil. The curious cows ventured out to explore the fog, while the rest of the happy animals slept dreamily in the cozy barn at Wolfe’s Neck Farm in Freeport, Maine. Ice faeries glided over the ice on hot skates, leaving infinities of melting power. Anything above a whisper seems too loud on days like this. Tree branches sway dance ever so slowly in the dewy air. We go home to roast a chicken, scented with bright oranges, in the oven.
Roast Orange Chicken
That first misty spray when you peel into a fresh, juicy orange is a surprize to the eye and oh so refreshing. Such a rejuvenating scent and youthful taste, beautiful packaging, and texturally interesting to the fingertip. The house feels lightened and lively as this dish happily roasts. A good time to stretch and breathe deeply…
Non-GMO, organic, local, free range, grass-fed ingredients:
A whole chicken, 1/2 orange, olive oil, pepper.
Zest 1/2 orange over the chicken, drizzle olive oil, pepper. Place the 1/2 orange into the chicken and bake at 350 degrees for 90 minutes or until golden and cooked through. (Cooking time depends on the size of the chicken.)
Remove and let rest. Carve and serve warm with salads using the other half of the fresh orange, and roasted or steamed vegetables. The roasted oranges may be bitter or sweet, depending on the orange, so eat what you like. Compost if not a good orange. Usually, we don’t make recipes involving any waste, but this was a new one. The chicken is wonderfully flavoured with sweet orange.
