Japanese Sweet Potato Mash
Warm your soul and appease your taste buds with this golden dish.
Non-GMO, organic, vegan ingredients:
Either steam or slow cook Japanese sweet potatoes in vegetable broth until soft and tender. Mash up and add a splash of organic unsweetened coconut milk. Not a bite left for leftovers!

Non-GMO, organic, local, vegan ingredients:
Sweet potatoes, Pinches of Cinnamon, Pepper, Salt (Optional), Olive Oil/Coconut Oil.
Carefully slice sweet potatoes as thinly as you can without hurting yourself, about 1/8″ thick. (Use knife, veggie slicer, or food processor with slicer blade. If using a knife, just quarter the end piece.)
In a bowl, coat and mix slices with oil. Place slices in a singular layer on a baking sheet. Sprinkle seasonings over top of the slices.
Bake at 350 degrees for 30-40 minutes depending on the thickness and level of crispness you like.
For babies/children: Leave out salt and cook until tender but not crispy. (You can also steam extra slices in water with no salt.)
