Velvety Ginger Coconut Chicken

Soft, fluffy, sweet, coconut flour-cornmeal-egg breading invigorates organic chicken in a dance of sumptuous “mmmm’s.”

Non-GMO, organic, local, free range, grass-fed ingredients:

4 Chicken Breasts

2 Eggs (Pepper egg mixture)

2-4 tbsp Butter

Bone Broth or Water

Cornmeal & Coconut Flour (Add enough for how ever many chicken breasts you have.  Ours was about 3/4 C each.  You can always add more so as not to waste any food.  These are healthier and more delicious than white flour.)

Add to flour mixture:  Cinnamon, Ginger, Lightly Salt, Fresh Ground Pepper, and any other spices you like.

Preheat oven to 350 degrees F.  Place eggs in a bowl, pepper, and set aside.  Place flour, cornmeal, and spices on a large plate and mix with hands.  Feel how light and airy this breading is already!  Coat chicken pieces, one at a time, in flour mixture, then in egg, then back in flour mixture.  Set aside in a glass casserole dish large enough for 4 pieces.  Heat a large pan with butter and place all 4 chicken breasts in until first side is browned.  Flip the pieces over and brown on the 2nd side.  Remove and place back in glass dish.  Add a shallow level of homemade bone broth or water, and cover with foil.  Bake until fully cooked.  Ours takes around 50 minutes.  Every oven/amount of chicken is different.

You can slice one to check color or use a meat thermometer.  We slice to check.

{The idea is to brown the breading in the pan, and after it cooks in the oven, it gets crispier and flour is cooked in butter instead of powdery.  Adding bone broth and covering the dish in foil not only steams the chicken and cooks lovelier, but it keeps the chicken moist and oh so soft!}

Serve with fresh greens and vegetables, a veggie soup, or roasted veggies in olive oil and salt & pepper.  This dish does make great leftovers, but sometimes does not always last long because of the amazingly delicious taste and texture.  Great for kids of all ages!
