Pancakes are our occasional comfort food. This new recipe is a healthier version of regular white flour pancakes. It is so versatile for adding your favorites and lends itself to any mood or flavor.
Non-GMO, organic, local, free range, grass-fed ingredients:
3/4 cup Whole Grain Spelt or Whole Wheat Flour (Click for more info about this.)
3/4 cup Cornmeal
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Saigon Cinnamon
1-1/4 cups Kefir (May need more depending on dryness of dough and absorptiveness of flour.)
3 tablespoons butter, melted in pan
Add any fruit, veggie, and spice you like!
Combine all ingredients except butter. Ladle some of the batter into the heated pan of butter. Flip when evenly bubbles. The second side usually cooks faster than the first. Add more butter to the pan before starting a new batch.
Make whatever size pancakes you want and add anything you like.
Slow Cooked Chicken Strawberry Cakes: Shred up some slow cooked chicken and cut up some strawberries. Add some apricot spread with no sugar added. (For more details, see our upcoming recipe for Crock Pot Chicken Stew which is adaptable for babies, children, and no salt diets.)
Fruit Cakes: Add fresh fruit such as berries, pear, or apples to your batter for an instant luscious delight!
Veggie Cakes: Shred up some carrots or chop up some shallots and swiss chard. Any veggie you like might like to try a bath in this scrumptious batter as an occasional treat.
For Apples: Steam chopped up apples with a small amount of water in a pan. Add warm spices like cinnamon, nutmeg, anise seed, etc. Cook until tender with lid on/tilted. Add to cornbread pancake batter and let the magic begin! Place in a glass dish and put lid on when cooled to store in the refrigerator. Use in other dishes or eat on their own. Excellent with pork chops.
Fruit Spread with no added sugar or ingredients is a year round treat that can be added to these cornbread pancakes and other dishes like pork chops. They are a wonderful kitchen helper when looking for something extra to improvise your dinner into the marvelous.
