A cozy stew to warm you up on those early Spring days!  Simple, fast preparation, then enjoy a slow, deliciously scented home while stewing.

Cozy Beef Stew

Non-GMO, organic, local, free range, grass-fed ingredients:

High Quality Organic Beef Stew Meat

Chopped Whole Carrots, amount added depends on the size, we used 3-4 large carrots from a local farm

A whole chopped up celery stalk

A bunch of potatoes quartered (skins on)  *Note from 7-16:  Use sweet potatoes instead for optimal health. 

Any other veggies you like!

Salt and Pepper and add any Spices you like!  We used:  Ras el Hanout, Cumin, Mustard Seed Powder.

Water or Broth

In a pot or crock pot, place meat, celery, carrots, sweet potatoes, spices, and water to cover them.  Place lid on and cook on low until soft, about 8 hours or until the meat easily shreds apart and all vegetables are tender.  Add salt and pepper to taste.

Serve in bowls with a spoon and some grated Parmigiano Reggiano cheese over top.  Tuck in with a blanket and stew for a cozy meal.  If you cook it overnight, you can have this for breakfast or brunch if you like.  Even a little bit in the morning is good, especially if you have respiratory conditions.  Someone has to be the taste tester…why not you? 🙂

(If you want a thicker stew, you can take some of the stew and blend it and return it to the pot.  It’s great for our health, especially for fickle weather when seasons are transitioning.  Celery is one of those super health boosting vegetables.  See Here:  Some info and tips for getting the maximum nutrients from your celery.)
