(Note from June ’16:  We don’t use peanuts, sugar, whole milk, or cream in our cooking anymore.  So instead of ice cream, we’ll dabble in sorbet/frozen fruit dishes.)

Perfect Pie Pastry Crust

Note from 7-16:  As flour is not great for optimal health, this is only an occasional dish.

(For 8-9″ two crust worth round) Just remember to cut slits in the top crust, and you can do an egg wash for a golden pie.  I cut slits in a heart shape and brushed an egg wash over the crust before baking.

Non-GMO, organic, local, free range, grass-fed ingredients:

2/3 cup + 2 tbsp Butter

2 cup Spelt Flour

1 tsp Salt

4-5 tbsp Cold Water

Cut butter into flour and salt until particles are size of small peas.  Sprinkle with cold water, 1 tbsp at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl.  Add more water if needed.

Gather pastry into a ball on a floured surface and roll out to 1/8″-1/4″.

Use a knife or a pizza cutter to cut triangles or diamonds in the dough.  If you are left with some small odd sizes, that is just fine as that is where my recipe name of “Scrimpet” was born.  They’re especially great for people who only want a little bite.

Turnover Fruit Filling

Non-GMO, organic, local, free range, grass-fed ingredients:

Use any fruit or ingredient mixture you like.  We used blueberries simmered on low in a pot until thick.  You can even use organic fruit spreads with no sugar added.  For a different take you can add a mixture of seeds.  If you love chocolate, the filling can simply be a tiny piece of 100% cacao.  Endless fun!

Add a tsp of cinnamon to your liking to the fruit filling.  Fruit has natural sweetness, so nothing added is needed.  Baked dough and fruit filling with an egg wash is perfect as they are, just as having only fruit is perfectly delicious.  This is an occasional sweet for us as we don’t use spelt/coconut flour often.

Spoon a small amount of filling on one side of your dough shape, leaving enough room around the edges to crimp/pinch.  (Optional:  You can add a tiny bit of butter, on top of filling if you like, same as you would with a pie.)  Fold over the other dough side and press gently with fingers or fork to seal the turnover.  Cut a small slit in each one.  Brush tops of the turnovers with an egg wash.  (Optional:  Sprinkle a tiny bit of raw sugar over top before baking.)  Bake in a 350 degree F oven for 15-30 minutes depending on the size of your scrimpets.  You can check on them and take them out when the top crust is golden brown.  You’ll hear them sizzling in the oven as they bake!
