Meatloaf + Roasted Potatoes
(Note no longer eating regular potatoes, replace these in this recipe with sweet potatoes! Make baked fries or a steamed/baked mash.)
Non-GMO, organic, local, free range, grass-fed ingredients:
Place baby potatoes in a baking dish, drizzle with olive oil (garlic infused), salt and pepper, chives, chopped garlic.
Place ground beef in another baking dish. Add two eggs, pepper, horseradish mustard to taste, organic corn meal/polenta to coat and mix. Bake both dishes in the oven at 350 degrees F for 30-40 min or until the potatoes are soft to the cut and the meat is cooked through. Take out and drain the meat juice out, unless you want to save to make gravy etc. The meatloaf will be moist and delicious. Place portions on a dish and finely grate some parmigiano reggiano cheese over both. This dish makes a great amount of leftovers. The fresh chives from the garden bring everything to life.
