Wild Blueberry Pancakes

Non-GMO, organic, local, free range, grass-fed ingredients:

Note from 7-16:  We don’t use flour or sugar in our cooking anymore.  You can try a pancake recipe that consists of a banana, 2 eggs, and blueberries.  I’ll be posting this recipe soon.

1 1/2 cups spelt/coconut flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon saigon cinnamon

1 tablespoon coconut sugar

1  1/4 cups kefir

1 egg

3 tablespoons butter, melted

1/2-1 Cup Wild Local Blueberries (small but powerful flavor!)

In a large bowl, sift together the flour, baking powder, salt and sugar.  Make a well in the center and pour in the kefir, egg and melted butter; mix until smooth.  Heat a lightly oiled griddle or frying pan over medium high heat.  Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.  Brown on both sides and serve hot.  We had it with some heated up blueberry sauce (blueberries and a few tbsp water that came to a low boil.)  Mmmm…ready for our Sunday!

Mini Meatballs

Wonderful side dish or main event.  Spice and flavor how you like!  Make a big batch and have lots of left overs.  Wonderful for when having company too.  Serve as an appetizer with some fresh herbs and a cheese + fruit plate.

Non-GMO, organic, local, free range, grass-fed ingredients:

Mix some ground beef with horseradish mustard, salt and pepper, beef rub spices, and a bit of crushed anise seed.  (Avoid anise seed if pregnant or breastfeeding.)  Roll into small balls and place on a baking sheet.  Space them like cookies.  Sprinkle some grated parmiggiano reggiano cheese over them and bake until medium about 15-25 minutes at 350 degrees F.  Keep an eye on them so they stay moist.  These keep very well as leftovers and you can serve them with various things like pasta or salads.  Have them for dinner or appetizers.  You can flavor to your taste.
