Apple Crisp

Heat oven to 375 degrees .  Slice up 4-5 local, apples and place in glass baking dish.  Mix apples with a few tbsp spelt/coconut flour, 1/2 cup coconut sugar,  1 tsp vanilla, 3 tsp cinnamon, 1 tsp crushed anise seeds, and a tiny pinch of salt.  (Avoid anise seed if pregnant or breastfeeding.)

Make a crumb topping in a bowl with 1 C organic oats, 3 tbsp soft butter, 1/4 baking powder, 1/4 baking soda, 1 tsp cinnamon, 1/4 c coconut sugar, 1 tsp vanilla.  Crumble over apples and bake for 45 minutes.

1 1/4 C Spelt/Coconut Flour

1/4 tsp Salt

4 Large Eggs

1 1/4 C Kefir

1 Tbsp Vegetable Oil

Mix until consistency of heavy cream, about 1-2 minutes.  Preheat oven to 400 degrees.  Oil, spray, or butter popover pan well.  If using non stick, like done here, then no need to grease the pan.  Fill up each cup 1/2-3/4 way full.  Bake for 20 min on 400, then for another 20 min on reduced heat of 375.  Batter can be made ahead of time and store in fridge, but use it at room temperature.

An easy way to fill the pans evenly is with a medium-large sized icecream scoop, or a batter bowl with a pouring spout on it works well too.

After you take them out of the oven, pop them onto a cooling rack, and pierce each popover with a sharp knife to let the steam escape, just a small cut works.

Warm right out the oven, these taste amazing.  Occasionally have for breakfast, snacks, or fill with your favorite dessert items such as organic cacao and berries.  Add organic bacon and hard cheese for a savory treat.  These versatile popovers lend themselves to your favorite flavors.
