Chocolate Chip Brownies

Non-GMO, organic, local, free range, grass-fed ingredients:

Note from 7-16:  We don’t make these anymore as we don’t use sugar anymore or as much flour in our cooking for optimal health.

1 C coconut Sugar

1/2 C Spelt Flour

1/3 C 100% Cacao powder

1/4 tsp Salt

1/2 tsp Baking Powder

2 Eggs

1/2 C Canola Oil

1 tsp Vanilla

*A few shakes of Saigon Cinnamon, really makes this recipe amazing.

Add in a handful of organic 100% cacao chips. Bake at 350 degrees in a 9″ X 9″ for 20-25 minutes.  Scrumptious!

Golden Popovers

Each one has a beautifully unique shape and coloring.  Their airy eggy texture makes this a great snack.  These are sooooo simple to make and come out right every time.

1 1/4 C Spelt Flour

1/4 tsp Salt

4 Large Eggs

1 1/4 C Kefir

1 Tbsp Vegetable Oil

Mix until consistency of heavy cream, about 1-2 minutes.  Preheat oven to 400 degrees.  Oil, spray, or butter popover pan well.  If using non stick, like done here, then no need to grease the pan.  Fill up each cup 1/2-3/4 way full.  Bake for 20 min on 400, then for another 20 min on reduced heat of 375.

Batter can be made ahead of time and store in fridge, but use it at room temperature. An easy way to fill the pans evenly is with a medium-large sized icecream scoop, or a batter bowl with a pouring spout on it works well too. After you take them out of the oven, pop them onto a cooling rack, and pierce each popover with a sharp knife to let the steam escape, just a small cut works.

Warm right out the oven, these taste amazing.  Have for breakfast, snacks, or fill with your favorite dessert items such as cacao and berries.  Add bacon and hard cheese for a savory treat.  These versatile popovers lend themselves to your favorite flavors.

Avocado Lunch

Non-GMO, organic, local, free range, grass-fed ingredients:

Spoon out some avocado onto a plate.  Salt, pepper, and a dash of olive oil.  Mash up lightly, and eat for a healthy snack or lunch.  (It’s surprisingly filling, and your hair and skin will thank you.)

Olive Oil Potato Salad

(Note from 7-16, we only use sweet potatoes instead of regular potatoes in our kitchen now.)

Non-GMO, organic, local, free range, grass-fed ingredients:

Cut up some golden potatoes, and boil until soft, about 10-15 min.  Drain and place in a bowl to cool.  Add olive oil to coat, a few splashes of balsamic vinegar, a tbsp of sugar, salt and pepper, bread and butter pickle relish, and toss.  Put in a tupperware and place in the fridge.

Applewood Grilled Chicken

Non-GMO, organic, local, free range, grass-fed ingredients:

Place chicken in the applewood rub and place on grill.  For a stronger flavor marinade in lime juice in a bag over night in the fridge.  Cook until done and place on freshly baked rolls.  Serve with the potato salad and fresh fruit.

We made extra for ready-made lunches for the week.
