Note from 7-16:  We don’t make this anymore to improve our health (we’re not using flour.)

1 1/4 C Spelt/Coconut Flour

1/4 tsp Salt

4 Large Eggs

1 1/4 C Kefir  (May need a little more kefir because spelt flour is thicker than regular flour.)

1 Tbsp Vegetable Oil

Mix until consistency of heavy cream, about 1-2 minutes.  Preheat oven to 400 degrees.  Oil, spray, or butter popover pan well.  If using non stick, like done here, then no need to grease the pan.  Fill up each cup 1/2-3/4 way full.  Bake for 20 min on 400, then for another 20 min on reduced heat of 375.  Batter can be made ahead of time and store in fridge, but use it at room temperature.

An easy way to fill the pans evenly is with a medium-large sized icecream scoop, or a batter bowl with a pouring spout on it works well too.

After you take them out of the oven, pop them onto a cooling rack, and pierce each popover with a sharp knife to let the steam escape, just a small cut works.

Warm right out the oven, these taste amazing.  Have for breakfast, snacks, or fill with your favorite dessert items such as chocolate and berries.  Add bacon and cheese for a savory treat.  These versatile popovers lend themselves to your favorite flavors.
