Non-GMO, organic, local, free range, grass-fed ingredients:
~100 g organic cacao (you can sweeten with apricot spread with no sugar added, melt along with the cacao)
~Brittle of your choice. (I crushed up some old-fashioned style small pretzel sticks and seeds. A twist on chocolate covered pretzels. Note from 2016: We don’t have pretzels or peanuts anymore to improve our health. We now use other nuts, seeds, and fruit for this recipe.)
It’s heavenly with hazelnuts, macadamia nuts, and pistachios. For Holidays like Christmas, add coconut for a snowy look and a chewy texture.
Combine chopped nuts and pieces on a pan lined with baking paper. Mix them well. Spread the nut mixture “flat” into one layer. Place the cacao in a heat proof bowl over simmering water. Stir until melted and smooth. Remove from heat and pour evenly over the chopped nut mixture. Refrigerate for 30 minutes or until the cacao is set. Cut the brittle into rough pieces and serve with your favorite dessert, fruit, hot cacao, tea, coffee, wine, or just have it alone as a snack. Serves 6.
